Directions
Salt 1 kg (approximately 2.2 pounds) of your preferred protein – chicken, lamb, beef, pork, paneer, or tofu – mix well in 10 oz of marinade and marinate for one hour in fridge (overnight preferred).
- Take out of fridge 20 minutes before cooking and bring to room temperature.
Just before cooking, drizzle in 60 ml (¼ cup) of oil and mix well.
Cook – time and cooking temperature will depend on method and protein – but we recommend grilling for best results.
Sprinkle desired amount of chaat masala before serving.
Optional garnishes: chopped coriander and mint leaves, lemon or lime wedges, ginger cut into matchsticks, thinly sliced red onion, pomegranate arils.
